Hazzard’s sizzling brand
ONE of Barbados’ most renowned chefs, John Hazzard, will be taking over the management of Bougainvillea Beach Resort’s two restaurants from this week.
John Hazzard, the only chef to have captured the title of Caribbean Chef of the Year twice – in 1995 and again in 2004, will open his new signature restaurant Lanterns by John Hazzard where he will introduce his philosophy of using fresh local ingredients to create dishes with international flair.
“My food should be light, clean Caribbean cuisine, no heavy sauces; Caribbean food that reflects the region”, he said.
Over the years Hazzard has enhanced his career by working at a number of prestigious establishments, including the Savoy Hotel in England, Kunstuben Restaurant in Switzerland, Aureole Restaurant of New York, the former Fairmont Glitter Bay Hotel, as well as Sandy Lane Hotel in Barbados.
His vision for the other restaurant, Water’s Edge, is modern Italian with both à la carte and family-style dining and comfort food at its best.
