Cou Cou – the taste of BMEX

Cou Cou is still very much a favourite food in Barbados, especially on Saturdays.
It was no wonder then that it created a stir at BMEX yesterday.
The booth operated by John Phillips and assistants Janillia August and Kelly Bascombe attracted several patrons to the Lloyd Erskine Sandiford Centre during the early hours.
But it was more than the alluring smell of the salt fish gravy and the familiar yellow delicacy.
It was really the brightly coloured packages marked Cou Cou Mix, that caused people to pause for the cause.
The mix was developed by Phillips, who is a biologist, and according to him, it has been getting favourable reviews. He is looking at tapping into the overseas market.
Prior to this solid mix, Phillips developed a liquid formula for the School Meals Department which has been fed to thousands of schoolchildren from September last year.
