Mix of Bajan, world cuisine ‘a recipe for success’

INTERNATIONAL CHEF Marcus Samuelsson says he is happy with what he termed “the progress of Bajan cuisine”.

“I watch how the culinary scene on the island keeps evolving and it’s still centred around the local experience but it’s also getting to a higher-end level and [as] a great island you need both,” said the celebrity chef, now on his sixth visit to Barbados as part of the Barbados Food & Wine And Rum Festival.

He noted that the local pride and its mixture with international influences were the perfect marriage of elements that benefited tourism and fed the growth of the hospitality experience in Barbados.

Samuelsson was speaking on Friday night at the all-new Fusion Rooftop on the top floor of Limegrove for the Wine And Rum’s Mix & Mingle event.
