How To Cook Like A Bajan: Farmers Choice Cherry and Cumin Ham

INGREDIENTS
Ham 1 large whole
Cherry wine 1 cup
Brown rum 1⁄2 cup
Nutmeg 1 tsp
Cumin 2 tbsp
Sugar 1 cup
GLAZE
Toast cumin and nutmeg in the bottom of a medium pot. When fragrant add cherry wine and rum and reduce by 1⁄4. Add sugar and reduce to the consistency of syrup.
HAM
Thaw ham if frozen, preheat oven to 325°F. Score ham skin in a diagonal pattern, place ham on try in roasting pan on wire tray. Fill the bottom of the pan with about a centimetre of water. Cover the ham with foil and bake for 2 hours (depending on the size of the ham). Ham should read 140°F at the centre.
Turn up the oven to 400°F, glaze ham with cherry cumin glaze and return to oven for 10 minutes, repeat until ham skin is crispy and a deep golden brown.
