BADMC Beef Roast Stuffed with Sausage

Ingredients
- 1 1/2 pounds beef prime roast
- 1 cup beer
- 1 clove garlic mashed
- 1/4 cup sweet onion finely chopped
- To taste sea salt
- 2 Eve Sausage Links, casings removed
- 1/2 punnet button mushrooms chopped
- 1 tablespoon fresh parsley minced
- 1 cup beef broth
- 1/2 cup Plantation Reserve Brown sugar
- 6 rashers Eve Bacon, reserve bacon fat from cooking
- Sage
- To taste pepper
PREPARATION STEPS
- Crumble Eve Sausage meat, and lightly sear, set aside. Season and sear mushrooms and set aside. Fry Eve Bacon rashers until crisp, chop and set aside.
- Take beef roast and slice at about 1/2 in thick until the roast is a flat sheet. Sprinkle with salt, pepper and sage to taste, spread mushrooms and sausage meat evenly on top of the beef. Roll to create a roulade. Tie beef with cooking string.
Season the outside of your beef roulade and sear it all the way around. Place on a half sheet pan with a silicone mat or parchment paper and roast at 350˚ to desired temperature (I go for medium).
- Using Eve Bacon fat in the same pan that the beef was seared in, sauté onions and garlic, deglaze with a beer and reduce. Add beef broth and sugar then reduce sauce to a glaze.
- Rest your roulade, remove the string, slice and serve with beer and bacon glaze.
