VIDEO: How To Cook Like A Vegan Episode 1 – Plant Based Mac and Cheese

Plant Based Mac and Cheese

Ingredients:

1L oat milk

2 tbsp neutral oil

2 tbsp oat flour

3 tbsp dijon

1 bay leaf

¼ cup nutritional yeast

1 tsp salt

1 tsp black pepper

3 tsp smoked paprika

16 oz macaroni or gluten free macaroni

These ingredients are available at Mindful Market

 

Steps:

🌱Add the oil to a hot sauce pan, and then the oat flour, whisk vigorously so the flour does not burn.

🌱Once the flour starts to brown (it will smell toasty), add in your oat milk, whisking vigorously to incorporate the liquid.

🌱Add bay leaf, dijon, salt, black pepper and smoked paprika, while whisking. It will thicken as it cooks, and you will want to taste it along the way to make sure the flour has been cooked out (no more powdery taste).

🌱Lastly you will want to whisk in the nutritional yeast, off the heat. Your cheese sauce is now ready!

 

Boil pasta until almost fully cooked.

Drain, rinse and mix in with your cheese sauce back on the heat, for the pasta to finish cooking.

Sprinkle with nutritional yeast, smoked paprika and black pepper to serve.

Makes 4 servings.
